Full description
In Përmet, gliko is more than a preserve — it is a memory, a ritual, and a living piece of identity passed down from mother to daughter for centuries. This intimate workshop, hosted by local women producers of ProPermet and supported by Planeterra and IUCN, invites you into the kitchen to experience it for yourself.
Depending on the season, the table may be filled with cherries, plums, wild figs, walnuts, or the small, special eggplants that Përmet is famous for. You watch and join the delicate process: selecting the fruits by hand, washing them carefully, and preparing them for the pot. As the gliko simmers, your hosts explain how the Slow Food Presidium "Gliko di Përmet" protects this heritage — ensuring that only fruit grown along the Vjosa valley, in soil nourished by one of Europe's last wild rivers, may carry the name. The experience ends with a traditional homemade lunch while the gliko cooks. A deeply personal, unhurried, and genuinely local experience in one of Albania's most beautiful river valleys.
Reservations must be made at least 5–7 days in advance. Groups of 3 or more. Max 12 people.
